When life (my mum) gives me lemons what do I do? I Bake!
With so many lemon recipes we are spoilt for choice when we find ourselves abundant with lemons. This is a recipe that came from the fact I had so many lemons and one egg.
DELICIOUS LEMON BARS
Preheat your Belling oven to 180 degrees on fan bake, then line a baking tray or slice tray with baking papers.
I do this part in a food processor but hand mixing also works.
take 1 Cup of plain flour
1/2 Cup of icing sugar
120grams of softened butter
a splash of vanilla essence
Blend or mix until it is mixed and may look crumby. Press into your prepared pan and bake for 15 minutes or until the top starts to colour.
For the topping, mix together
1 can or sweetened condensed milk, the low fat version is fine to use
1 Tablespoon of lemon zest
the juice from that lemon
2 Tablespoons of flour
1/2 teaspoon of baking powder
When your base is ready, take out of the oven and immediately pour on the topping. Place back in the oven for another 15 minutes or until the top starts to colour.
Take out and allow to cool (who are we kidding, I can never wait). Dust with icing sugar, slice and enjoy!
