What’s up doc?

How do you get a non-vegetable eater to eat vegetables? You put it in a cake and put cream cheese icing on top!   There are several cake versions with vegetables in them, beetroot chocolate cake, zucchini cake, rhubarb cake, pumpkin cake and my favourite carrot cake. 

The way I see it, my recipe has carrots (obviously) oil and eggs, which is basically mayonnaise, it’s like coleslaw so really it’s a salad. 

This is the recipe for a cake but I use it for cute little cupcakes and decorate them with a little fondant carrot.

Carrot cup cakes

1 cup plain flour

1 teaspoon of baking soda

1 teaspoon of baking powder

1 teaspoon cinnamon

¼ teaspoon of salt

1 cup brown sugar

¾ cups of vegetable oil

2 eggs

1 ½ cups of grated carrot

Makes 8 cupcakes

Preheat fan oven to 170°C and line a cupcake pan with 8 large cupcake cases

Sift flour, baking soda, baking powder, cinnamon and salt in bowl and mix.

Add sugar and mix again

In a separate bowl, whisk egg with oil and stir in grated carrots.

Pour wet mixture into dry ingredients and mix to form a smooth batter.

Spoon in to cupcake papers two thirds of the way up.

Bake for 15-20 minutes until done (test by pressing lightly on the top and it should spring back)

When cooled, ice with cream cheese icing and decorate with a fondant carrot.


Cream Cheese Icing

125 g room temperature cream cheese

25g softened butter

½ teaspoon of vanilla extract

150g icing sugar

Mix butter and cream cheese until smooth, then add vanilla and icing sugar until incorporated.


So now you can unleash the power of carrots and get improved vision, prevent heart disease and tap into their anti-aging qualities.  I’m eating my vegetables,  that’s what’s up Doc.
